Well, the picture that I had used that wasn't working is in jpeg format, so I don't know what the problem is. Oh well! I've moved onto working with another picture now hahah.

and oh! after playing around for it a bit I realized I needed to hit CTRL+d after i do the first one before trying to move on and recolourize another part!

okay well...
you should only be working with pictures in JPEG or PNG because GIF is a format used to animations & is totally different.
also, when you "colorize" your second object, don't worry about it changing the hue/saturation of your first object because that only pertains to the object it has selected.
did that make any sense?! LOL.

Uh oh! I have another question (sorry). when you go back to repeat the process to finish colouring in the rest of the picture, how do you get it so the hue and saturation doesn't effect what you previously did, either?

Yes'm! Let's see, I just now did it again and I'll take you step by step about what I do and maybe you can figure out what it is:

1) I open Adobe Photoshop cs3 extended
2) i open the picture i'd like to use.
3) I switch into quick mask mode
4) I colour which part I want with the brush
5) I change out of quick mask mode
6) there's the dotted outlines and such. I go to select>inverse
7) I then go to Image>adjustment>

then hue and saturation is dim and non-selectable :(

i just tried another picture and, oddly enough, it worked PERFECTLY fine. i guess it's just that one particular picture i tried using? if it's saved in a particular format would that prevent it from working?

mhm! i even went back and forth between it, and once even went over to the sidebar and chose it from there instead of just using the button on the keyboard as a shortcut (i had tried several times). i apologize for the problem! i love all of the tutorials you have set up and found them helpful, and have never had a problem with any of the others at all. so im not quite sure whats wrong here. i could be making a careless mistake and not realize it! :[
